While most shoyu soy sauces are brewed only once, saishikomi shoyu is brewed twice. This process gives it a deep, intense flavor that makes it stand out compared to other types of shoyu. It is one of the darkest, and thickest forms of Japanese soy sauce owing to the fact that excess water is removed during the second fermentation.
The Premium Saishikomu Shoyu by Suehiro is naturally brewed with 100% domestically produced soybeans and wheat local to the brewery. Its three-stage preparation process takes more time and effort than most soy sauce production, but gives it a special taste and a premium feeling.
Suehiro soy sauce brewery is based in Tatsuno, in Hyogo Prefecture, and has been brewing shoyu there since 1887. They use Tatsuno’s famously clean and soft mountain water to make their shoyu.
