Blijedožuta sa zelenim svjetlom. perlage je obilan i živi fini mousse koji ostaje na vrhu čaše. Elegantan nos, fini, svježi orašasti plodovi, suptilne arome vanilije koje uvode svježe agrume poput grejpa i limete. Usta glatka na početku, brzo prelaze do živahne svježine tipične za chardonnay. Završetak na bijelim cvjetovima ima veliku slanost koja dolazi od krede, pa se prisjetimo čistoće podrijetla terroira.

 

Pale yellow with a green light. the perlage is abundant and live a fine mousse which stays at the top of the glass. Elegant nose, fine, fresh nuts, subtle vanilla aromas which introduce fresh citrus fruits like grapefruit and lime. The mouth smooth at the beginning lives quickly the place to the lively freshness typical of the chardonnay grape. The end on white flowers has a great salinity which comes from the chalk, makes remember the purity of the origin of the terroir.

Ovaj čisti Chardonnay izbor je iz tri parcele. Jedna trećina dolazi iz “Les Hautes Mottes” iz Le Mesnil-sur-Oger; druga trećina, s “Vozémieux” terroira Oger. Ova dva terroira Cote des Blancs klasificiraju se kao Grand Cru, a vinova loza nikada nije bila tretirana herbicidima ili pesticidima. Posljednja trećina dolazi s tla “Les Corrigniers” Ludes, Premier Cru, Montagne de Reims. Ovo veliko vino je isklesano i precizno; napetost je prisutna i traje u slanoj završnici. Izvanredno vino.

 

This pure Chardonnay is a selection from three plots. One-third comes from “Les Hautes Mottes” of Le Mesnil-sur-Oger; the second third, from the “Vozémieux” terroir of Oger. These two terroirs of the Cote des Blancs are classified Grand Cru, and the vines have never received herbicides or pesticides. The last third comes from the soil “Les Corrigniers” of Ludes, Premier Cru, of the Montagne de Reims. This great wine is chiseled and precise; a tension is present and persists in a saline finish. An outstanding wine.

Povijesna pokrajina Champagne nalazi se na sjeveroistoku Francuske te je jedna od najpoznatijih svjetskih regija u kojoj se proizvode prirodna pjenušava vina. Naziv Champagne ekskluzivan je samo za proizvođače iz te regije, a sustav zaštite geografskog podrijetla jedan je od najstarijih u Europi (Appellation d′origine contrôlée – AOC). Površine koje obuhvaća pokrajina Champagne za proizvodnju šampanjca određene su 1927. prema AOC, one iznose 34 000 hektara. Na području Champagne sveukupno se nalazi oko 16 000 vinara s 278 000 vinograda.

Pokrajina je podijeljena na 5 okruga za proizvodnju vina: Aube, Côte des Blancs, Côte de Sézanne, Montagne de Reims i Vallée de la Marne. Najzastupljenije sorte su Pinot noir, Pinot Meunier i Chardonnay. Najpoznatiji šampanjski cuvée radi se upravo iz ovog grožđa, Blanc de blancs je šampanjac proizveden 100% iz grožđa Chardonnay-a, a Blanc de noirs je šampanjac proizveden od Pinot noir-a, Pinot meunier-a ili kupaže istih.

Povijest šampanjaca započinje s benediktancem Pierre Perignonom koji je u opatiji Hautvillers kraj Epernaya otkrio drugu fermenaciju. Pierre Perignon, pionir proizvodnje šampanjaca, najviše je poznat po pomnom biranju baznih vina te pravljenju prvih „blendova“ za šampanjce. Revolucija u proizvodnji šampanjaca dogodila se u Limouxu, provođenjem druge fermentacije u boci.

Boce šampanjca kada se napune u vinarijama odlaze na odležavanje u rudnike krede ispod vinarija, dugi i po nekoliko kilometara, neki se nalaze čak 40 metara ispod površine. Klima koju oni stvore puna je vlage i savršene temperature za odležavanje vina te stvaranje bukea šampanjaca.

 

The historic province of Champagne is located in the northeast of France and is one of the world’s most famous regions where natural sparkling wines are produced. The name Champagne is exclusive only to producers from that region, and the system of protection of geographical origin is one of the oldest in Europe (Appellation d′origine contrôlée – AOC). The areas covered by the province of Champagne for the production of champagne were determined in 1927 according to the AOC, they amount to 34,000 hectares. In the Champagne area, there are a total of about 16,000 winemakers with 278,000 vineyards.

The province is divided into 5 wine-producing districts: Aube, Côte des Blancs, Côte de Sézanne, Montagne de Reims and Vallée de la Marne. The history of champagne begins with the Benedictine Pierre Perignon, who discovered another fermentation in the abbey of Hautvillers near Epernay. Pierre Perignon, a pioneer of champagne production, is best known for carefully choosing base wines and making the first “blends” for champagne. A revolution in champagne production took place in Limoux, by conducting a second fermentation in the bottle.

When the bottles of champagne are filled in the wineries, they go to age in the chalk mines under the wineries, several kilometers long, some of which are as much as 40 meters below the surface. The climate they create is full of humidity and the perfect temperature for aging wine and creating a bouquet of champagne.

Sedam generacija obitelji Gonet njegovala je vinograde u regiji Champagne i njegovala podrum osnovan 1783. godine koji se nalazi ispod obiteljske kuće. Smještena u Mesnil-sur-Ogeru, vina Gonet ističu se među svojim vršnjacima s minimalno 3 godine odležavanja na talogu, što je znatno više od uvjeta odležavanja od 15 mjeseci za šampanjac. Prosječna starost vinograda na obiteljskom imanju je između 30 i 40 godina, s jednom povijesnom parcelom zasađenom 1929. godine, na ulazu u selo Le Mesnil. Jedna trećina svih vinograda obitelji Gonet leži u ovoj željenoj zemlji Le Mesnil, klasificiranoj kao Grand Cru. Obitelj Gonet nastavlja težiti poboljšanju vinograda i vinarije sa strastvenim fokusom na održivost. Oni su dio nove skupine certificiranih proizvođača prema HVE (High Environmental Value certification, ili ‘Haute Valeur Environmentale’ na francuskom). Ova nova certifikacija zahtijeva postizanje 3 razine napretka prije dobivanja certifikata, s fokusom na obnavljanje bioraznolikosti u vinogradima. Ova praksa dio je novih ‘TER’ cuvéea iz obitelji Gonet.

 

For seven generations the Gonet family has tended vineyards in the Champagne region and nurtured a cellar founded in 1783 that lies beneath the family home. Located in the Mesnil-sur-Oger, the Gonet wines stand out among their peers with a minimum of 3 years on the lees, well beyond the aging requirement of 15 months for Champagne. The average age of the family estate vines is between 30 and 40 years, with one historical parcel planted in 1929, at the village entrance of Le Mesnil. One third of all of the Gonet family vineyards lie within this coveted land of Le Mesnil, classified as Grand Cru. The Gonet family continues to strive for improvement in both the vineyards and in the winery with a passionate focus towards sustainability. They are a part of a new group of certified producers under the HVE (High Environmental Value certification, or ‘Haute Valeur Environmentale’ in French). This new certification requires 3 tiers of progress be achieved before becoming certified, with the focus on renewing biodiversity in the vineyards. This practice is part of the new ‘TER’ cuvées from the Gonet family.
