Firenca i Pisa nose nadimak „gradovi umjetnosti“, dok neki Firencu nazivaju koljevkom renesanse.

Tuscany is one of the oldest and most famous wine-growing regions of Italy, whose tradition dates back to the Roman Empire. In addition to enchanting with the beauty of the rich landscape, mountains, forests, hills and parks, the greatest view captivates with its beautiful wine cellars and vineyards. The most famous Tuscan wines are Chianti, Brunello di Montalcino and Vino Nobile di Montepulciano. Chianti wines are the most famous wines of Tuscany. These are dry wines and range from lighter to full-bodied. They are produced from the Sangiovese variety with a small addition of Caniola, Trebbiana Toscano and Malvasia del Chianti, while the last two varieties have not been used since 2005. The wines have a special fruity character and the aroma is reminiscent of violets and cherries, and the taste of cherries. Brunello di Montalcino is a highly prized red wine from the city of Montalcino. It was made from the Sangiovese variety. Brunello is a wine with a powerful body, deep color and pronounced tannins. Wine has excellent aging potential. More than 80% of the production in Tuscany consists of red wines, for which it became famous, and the main variety is Sangiovese. The Sangiovese grape variety is one of the most prized and widespread cultivars in Italy, and thrives best in Tuscany. Tuscany gained fame precisely thanks to this variety, although the assortment is extremely wide (for example, Cabernet sauvignon was planted in Tuscany more than 250 years ago, but it has only recently become popular). Of the white varieties, Trebbiano is the most common, followed by Malvasia, Vermentino and Vernaccia. Apart from culture and oenology, Tuscany is also known for its gastronomy. Some of the most famous are olive oil, ice cream (gellato), riccota cheeses, pecorino, sheep cheeses of different ages, dried tomatoes and porcini mushrooms and truffles. Tuscan cuisine is known for its use of fresh ingredients that go well with sauces and red wine.

O VINARIJI / ABOUT THE WINERY

O VINARIJI / ABOUT THE WINERY

Podrum je mjesto gdje proces sazrijevanja ploda pronalazi svoj prirodni zaključak, jednostavno i bez sile: bez koncentracije, bez odvoda i niskog sumpora.

Bibi makes his wine in the family home, Castello di Vincigliata, a medieval castle overlooking Florence, which her parents bought when they moved to Fiesole. He started with his parents ’small two-acre vineyard, which he cultivated organically, and the rest of the grapes he began to take from growers who cultivate amazing places. He decided to rely on home-grown grapes and old vineyards, and he had a simple idea in mind: to find vineyards capable of producing grapes with features that increase the potential characteristics of Sangiovese, Canaiola, Colorino and Ansonica. Most of the selected vineyards are between 50 and 80 years old. The search for old vines and special territories led to the discovery of vineyards in the hills of Fiesola, near the winery, and vineyards in Rufina and Chianti Classico and Giglio Island. In these vineyards, they have not fertilized or cultivated the land for the last 15 years, so that the plants have a chance to grow spontaneously, without coercion. In these same countries they have since practiced the spontaneous growth of grass, leaving flowers and herbs to enrich the bouquet of scents. The winery also consists of small parts of the territory, as experience has shown that the nature of the soil can vary considerably, from one plot to another. Once selected, the grapes, identified and collected and separated according to the place of affiliation, are presented by appropriate wine production processes in barrels, steel or troncoconic. The cellar is a place where the process of fruit ripening finds its natural conclusion, simply and without force: without concentration, without drainage and low sulfur. They do not use selected yeasts in fermentation, to ensure that the identity of the vineyard can be better expressed. The company uses only a very small percentage of new barrels, all the others have already experienced up to 12 passes: so gently Sangiovese grapes can best rise in old wood, expressing all their scents and minerality. In 2000, his wines rudely invaded the quiet Tuscan wine scene and set out to win over fans around the world for their taste, complexity and elegance. In Testamatti he created one of the greatest Italian cult wines and together with Colori he makes two of the highest quality red wines in Italy.
