He decided to rely on home-grown grapes and old vineyards, and he had a simple idea in mind: to find vineyards capable of producing grapes with features that increase the potential characteristics of Sangiovese, Canaiola, Colorino and Ansonica. Most of the selected vineyards are between 50 and 80 years old. The search for old vines and special territories led to the discovery of vineyards in the hills of Fiesola, near the winery, and vineyards in Rufina and Chianti Classico and Giglio Island. In these vineyards, they have not fertilized or cultivated the land for the last 15 years, so that the plants have a chance to grow spontaneously, without coercion. In these same countries they have since practiced the spontaneous growth of grass, leaving flowers and herbs to enrich the bouquet of scents. The winery also consists of small parts of the territory, as experience has shown that the nature of the soil can vary considerably, from one plot to another. Once selected, the grapes, identified and collected and separated according to the place of affiliation, are presented by appropriate wine production processes in barrels, steel or troncoconic. The cellar is a place where the process of fruit ripening finds its natural conclusion, simply and without force: without concentration, without drainage and low sulfur. They do not use selected yeasts in fermentation, to ensure that the identity of the vineyard can be better expressed. The company uses only a very small percentage of new barrels, all the others have already experienced up to 12 passes: so gently Sangiovese grapes can best rise in old wood, expressing all their scents and minerality. In 2000, his wines rudely invaded the quiet Tuscan wine scene and set out to win over fans around the world for their taste, complexity and elegance. In Testamatti he created one of the greatest Italian cult wines and together with Colori he makes two of the highest quality red wines in Italy.
